  1. Take 4 Chicken thighs
  2. Use 1/2 cup Onion diced
  3. Provide 1/2 cup Carrots diced
  4. Provide 1/2 cup Celery diced
  5. Prepare 1 Salt & Pepper to taste
  6. Provide 4 quart chicken broth
  7. Get 1 can Cream of Chicken soup
  8. Take 1/4 cup chopped spinach
  9. Take 1 packages Gnocchi (not frozen)

Instructions to make Chicken & Gnocchi Soup :

  1. Heat Stock pot add 2 tbls of olive oil cook chicken til cooked.
  2. Remove chicken when completely cooked, set aside to cool. Add onions, carrots & celery saute til cooked 10 minutes.
  3. Add chicken broth to stock pot cook 30 minutes til vegetables are tender. Add Cream of Chicken Soup.
  4. Add package of Gnocchi cook until done.
  5. Remove chicken from bone.
  6. Add spinach & chicken. stir & serve.
